These funfetti cake mix cookies with cream cheese frosting are soft, colorful, and so easy to make for birthdays, parties, or bake sales. Made with a box of cake mix and topped with homemade cream cheese frosting, they are a simple dessert that looks fun and festive without a lot of work.

Ingredients
  

Funfetti Cookies:

  • 1 box funfetti cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/2 teaspoon vanilla extract

Cream Cheese Frosting:

  • 4 oz. cream cheese softened
  • 1/4 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1/2 tsp vanilla extract
  • 2 to 3 Tbsp rainbow sprinkles plus extra for topping if desired

Instructions
 

  • Preheat your oven to 350°F. Line a baking sheet with parchment paper so the cookies release easily and cleanup stays simple.
  • In a large mixing bowl, stir together the funfetti cake mix, eggs, vegetable oil, and vanilla extract until a thick dough forms. If you want to, you can fold in extra sprinkles with your dough.
  • Use a small cookie scoop or spoon to portion the dough into even balls. Place them on the prepared baking sheet, leaving about 2 inches between each one.
  • Bake for 9 to 11 minutes, or until the edges are set and the centers still look slightly soft. Do not overbake them if you want a soft cookie texture.
  • Let the cookies cool on the baking sheet.
  • In a medium bowl, beat the softened cream cheese and butter until smooth and creamy. Add the powdered sugar and vanilla extract, then beat until the frosting is fluffy and smooth.
  • Spread or pipe the cream cheese frosting onto the cooled cookies. You can put the frosting in a piping bag fitted with a plain round tip, or use no tip at all, to make easy swirls on top.
  • Sprinkle extra rainbow sprinkles if you want a bright and festive look.
