Cookie Monster Ice Cream Sandwiches
Cookie Monster Ice Cream Sandwiches are fun, no bake Halloween treats made from Chips Ahoy cookies, your favorite ice cream, and candy eyes. Scoop softened ice cream onto one cookie, top with another, press in candy eyes, then freeze until firm. Cute, fast, and perfect for parties or an easy dessert night.
Ingredients
- 1 package Chips Ahoy cookies original or chewy
- 1 to 1 ½ quarts ice cream I like my homemade blue Oreo ice cream (https://prettypastelitos.com/no-churn-blue-oreo-ice-cream/). Cookie dough, cookies and cream and even mint chocolate chip would also work
- Candy eyes
- Mini chocolate chips or crushed chocolate sandwich cookies for rolling the sides Optional
Instructions
- Line a baking sheet with parchment paper. Lay out half of the Chips Ahoy cookies flat side up; these are your bases.
- Let the ice cream sit at room temperature for 5 to 10 minutes until it is scoopable but not runny.
- Using a small cookie scoop or tablespoon, place a generous scoop of ice cream onto each cookie base. Aim for about 2 to 3 tablespoons of ice cream per sandwich so they look thick and “monster sized” but still easy to eat.
- Gently press a second Chips Ahoy cookie on top of each scoop, flat side facing the ice cream. Press just until the ice cream spreads to the edges, creating a neat sandwich.
- Shape and clean the edges. If any ice cream squishes out unevenly, use a butter knife or the back of a spoon to smooth the sides.
- While the ice cream is still soft, press 2 candy eyes into the sides of each sandwich.
- At this point you can roll the edges in mini chocolate chips, crushed cookies, or sprinkles if you like.
- Arrange all finished Cooke Monster Ice Cream Sandwiches on the lined tray. Freeze for at least 1 hour, or until firm. Once frozen, transfer to an airtight container and store in the freezer until serving.
- Let the sandwiches sit at room temperature for 3 to 5 minutes so they soften slightly.
