Make adorable Cookie Monster Ice Cream Sandwiches with Chips Ahoy, ice cream, and candy eyes. These no bake Halloween desserts come together in minutes and are perfect as easy Halloween party treats you can make ahead.

Ingredients for Cookie Monster Ice Cream Sandwiches

  • 1 package Chips Ahoy cookies (original or chewy)
  • 1 to 1 ½ quarts ice cream  (I like my homemade blue Oreo ice cream. Cookie dough, cookies and cream and even mint chocolate chip would also work)
  • Candy eyes
  • Optional: Mini chocolate chips or crushed chocolate sandwich cookies for rolling the sides

How to Make Cookie Monster Ice Cream Sandwiches

1. Line a baking sheet with parchment paper. Lay out half of the Chips Ahoy cookies flat side up; these are your bases.

2. Let the ice cream sit at room temperature for 5 to 10 minutes until it is scoopable but not runny.

3. Using a small cookie scoop or tablespoon, place a generous scoop of ice cream onto each cookie base.

Aim for about 2 to 3 tablespoons of ice cream per sandwich so they look thick and “monster sized” but still easy to eat.

4. Gently press a second Chips Ahoy cookie on top of each scoop, flat side facing the ice cream. Press just until the ice cream spreads to the edges, creating a neat sandwich.

5. Shape and clean the edges. If any ice cream squishes out unevenly, use a butter knife or the back of a spoon to smooth the sides.

6. While the ice cream is still soft, press 2 candy eyes into the sides of each sandwich.

7. At this point you can roll the edges in mini chocolate chips, crushed cookies, or sprinkles if you like.

8. Arrange all finished Cooke Monster Ice Cream Sandwiches on the lined tray.

Freeze for at least 1 hour, or until firm. Once frozen, transfer to an airtight container and store in the freezer until serving.

9. Let the sandwiches sit at room temperature for 3 to 5 minutes so they soften slightly.

Serve on a cute tray for easy Halloween party treats or pass them out straight from the freezer for movie night.

Pro Tips

  • Chill the cookies first. I pop the Chips Ahoy in the fridge for 20 minutes. Cooler cookies help the ice cream stay firm while you assemble.
  • Work in small batches. Try to assemble 4 to 6 sandwiches at a time and keep the rest of the cookies and ice cream in the freezer so nothing melts too fast.
  • Use a scoop for perfect portions. I use a cookie scoop because  it keeps all the ice cream portions the same size and makes the sandwiches look polished without extra effort.
  • Make ahead friendly. These can be made up to a week in advance. Once frozen solid, you can layer them in a container with parchment between layers so they do not stick.

FAQs

Can I use a different cookie instead of Chips Ahoy?

You can; but for the classic Cookie Monster Ice Cream Sandwiches look and crunch, Chips Ahoy work so well. You can swap in any crunchy store bought cookie that is about the same size.

What kind of ice cream works best?

I love my homemade blue Oreo ice cream, cookie dough, or cookies and cream. Any flavor that pairs nicely with chocolate chip cookies will work. Just avoid sorbets or super icy textures so the sandwiches hold their shape.

How long can I store these in the freezer?

You can keep them up to 2 weeks in an airtight container. After that they are still safe, but the cookies may get a little softer.

How do I keep the candy eyes from falling off?

I make sure to press the eyes into the cookie while the ice cream is still soft (but not melting) and then freeze as soon as possible. If they loosen later, I add a tiny dab of softened ice cream or frosting as “glue” and refreeze.

Can I make these for a party without them melting everywhere?

I would keep them in the freezer until you’re ready to serve, and then bring out a few at a time. For outdoor parties, or if you live in a warmer climate, you should definitely keep them in the freezer and eat them right away.
