Vegan Red Velvet Cake Mix Cookies

These vegan red velvet cake mix cookies are super easy to make with just four ingredients!

Ingredients
  

  • 1 red velvet cake mix check the ingredients to make sure it's vegan
  • 1/3 cup vegetable oil or melted coconut
  • 1/4 cup plant-based milk almond, soy or oat are all fine
  • 1/2 cup vegan-friendly white chocolate chips or dark chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix the red velvet cake mix, vegetable oil and plant-based milk in a large bowl until a thick dough forms.
  • Fold in the dairy-free chocolate chips if using.
  • Scoop tablespoon-sized portions of dough and place them onto the prepared baking sheet, spacing them about 2 inches apart. I like to roll mine into balls, but you don't have to.
  • Press some extra white chocolate chips into the outside of your dough balls for extra aesthetic cookies.
  • Bake for 10-12 minutes, or until the edges are set.
  • Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. To be honest, you can skip this step if you want to! I usually leave my cookies a tad bit underbaked and let them finish baking on the baking sheet out of the oven.
