These Valentine’s Day Sprinkle Sandwich Cookies are the easiest festive treat you can make! Soft Chips Ahoy cookies are filled with a swirl of vanilla buttercream and rolled in colorful Valentine’s sprinkles for a quick, fun dessert.

Ingredients
  

  • 48 soft Chips Ahoy cookies
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 2 tsp vanilla
  • 1-2 Tbsp milk or heavy cream
  • Valentine's Day themed Sprinkles smaller sprinkles work best

Instructions
 

  • Make the buttercream. In a mixing bowl, beat the softened butter until smooth and creamy. Add the powdered sugar, vanilla extract and 1 tablespoon of milk. Beat until light and fluffy, adding extra milk only if needed for a perfectly spreadable consistency.
  • Prepare your sprinkles. Pour your Valentine’s sprinkles into a shallow bowl. This makes it easy to roll the edges once the cookies are assembled.
  • Pipe the frosting. Transfer the buttercream to a piping bag fitted with a plain round tip or no tip at all. Pipe a generous swirl onto the bottom of one soft Chips Ahoy cookie. If you don’t want to pipe, you can spread it with a knife. However, piping really elevates the look and makes putting the sprinkles on cleaner and easier.
  • Make the sandwich.Top with a second cookie and press lightly until the buttercream reaches the edges.
  • Add the sprinkle edge. Roll the sides of the sandwich cookie in your bowl of Valentine’s sprinkles. The frosting will grab the sprinkles instantly, creating the cutest colorful border.
  • Serve or chill. You can enjoy them right away, or chill for 15–20 minutes to help the buttercream firm up, especially if you're transporting these to a party!
