Halloween Sprinkle Cookie Sandwiches

 hese Halloween Sprinkle Sandwich Cookies are made with Chips Ahoy cookies, vanilla buttercream, and festive Halloween sprinkles. They’re quick, colorful, and no-bake—perfect for Halloween parties, class treats, or a fun fall activity with kids.

Ingredients
  

  • 36-40 Chips Ahoy cookies for 18-20 sandwiches
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 2 Tbsp milk or heavy cream
  • 2 tsp vanilla
  • Halloween-themed sprinkles

Instructions
 

  • Beat the softened butter and powdered sugar together in a medium bowl. Add vanilla and milk and mix until the frosting is smooth and fluffy. (I like to put my frosting in a piping bag with no tip or a plain round tip, but you can also use a butter knife.)
  • Pair up your Chips Ahoy cookies by size.
  • Flip one cookie of each pair upside down and pipe or spread a generous amount of frosting onto the flat side. 
  • Gently press the second cookie on top to make a sandwich.
  • Pour your Halloween sprinkles into a shallow bowl or plate. Gently roll the sides of each cookie sandwich in the sprinkles until the frosting is fully coated. You might need to press lightly so the sprinkles stick well.
  • Place the cookies in the fridge for 10–15 minutes to help the frosting set. Store them chilled until ready to serve. (Note: You might see some condensation on these after you pull them out of the fridge, but they will absolutely taste the same!)
