Halloween Ice Cream Cookie Sandwiches

These Halloween Cookie Ice Cream Sandwiches are the perfect no-bake treat! Made with store-bought cookies, vanilla ice cream, and festive Halloween sprinkles, they come together in minutes and are perfect for parties or movie nights.

Equipment

  • 1 medium cookie scoop for getting even-sized sandwiches

Ingredients
  

  • 30 (Or any even number) chocolate chip cookies I used Chips Ahoy
  • Vanilla ice cream or any ice cream flavor your want
  • Halloween-themed sprinkles

Instructions
 

  • Let the vanilla ice cream sit out at room temperature for about 5–10 minutes so it’s soft enough to scoop but not runny.
  • Place one cookie bottom-side up, then scoop about 2–3 tablespoons of ice cream onto it. You can use a cookie scoop or a regular spoon. Flatten slightly with the back of the scoop if needed.
  • Press a second cookie on top (bottom-side down) to create a sandwich. Gently squeeze until the ice cream reaches the edges, but be careful not to crack the cookies.
  • Pour Halloween sprinkles into a shallow bowl or plate. Roll the edges of the sandwich in the sprinkles so they stick to the ice cream. You can press them in a little with your fingers if needed.
  • Place finished sandwiches on a parchment-lined tray and freeze for at least 1 hour so they firm up. After that, you can transfer them to a freezer bag or container until you're ready to serve.
