In a microwave-safe mug, combine the protein powder, oat flour, brown sugar, baking powder, salt, and cinnamon. Stir until dry ingredients are evenly mixed.
Melt just one tablespoon of butter, but keep 1 teaspoon solid butter for the streusel
Add the milk, melted butter or coconut oil, and vanilla extract. Stir until the batter is smooth and lump free, scraping the sides of the mug.
Make the streusel by mixing a teaspoon of butter, oat flour, brown sugar, and cinnamon in a small bowl until crumbly. You can use a small fork or your fingers for best results.
Microwave your mug cake about halfway (25-30 seconds)
Sprinkle the streusel evenly over the top of the batter in the mug.
Microwave until done, which should be another 25-30 seconds. Stop at 25 seconds and start checking. I usually add 10 seconds at a time after that until it’s done, but if your microwave is particularly strong, I would recommend an extra 5 seconds at a time.
Let the mug cake cool for 1 to 2 minutes to cool and enjoy fresh of out the mug.
