This Coffee Cake Protein Mug Cake is a high-protein, single-serve coffee cake you can make in a mug in about a minute. Simple pantry ingredients plus a buttery oat streusel give you a quick breakfast or healthy dessert with cozy cinnamon flavor.

Ingredients
  

Coffee Cake Mug Cake

  • 3 Tbsp vanilla protein powder
  • 1 Tbsp oat flour or all purpose flour
  • 1 Tbsp brown sugar
  • 1/4 tsp baking powder **see note
  • pinch salt
  • 3 Tbsp milk
  • 1 Tbsp melted butter
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon

Streusel

  • 1 tsp butter
  • 1 Tbsp oat flour
  • 1 tsp brown sugar
  • pinch cinnamon optional

Instructions
 

  • In a microwave-safe mug, combine the protein powder, oat flour, brown sugar, baking powder, salt, and cinnamon. Stir until dry ingredients are evenly mixed.
  • Melt just one tablespoon of butter, but keep 1 teaspoon solid butter for the streusel
  • Add the milk, melted butter or coconut oil, and vanilla extract. Stir until the batter is smooth and lump free, scraping the sides of the mug.
  • Make the streusel by mixing a teaspoon of butter, oat flour, brown sugar, and cinnamon in a small bowl until crumbly. You can use a small fork or your fingers for best results.
  • Microwave your mug cake about halfway (25-30 seconds)
  • Sprinkle the streusel evenly over the top of the batter in the mug.
  • Microwave until done, which should be another 25-30 seconds. Stop at 25 seconds and start checking. I usually add 10 seconds at a time after that until it’s done, but if your microwave is particularly strong, I would recommend an extra 5 seconds at a time.
  • Let the mug cake cool for 1 to 2 minutes to cool and enjoy fresh of out the mug.
