These festive parfaits are made with creamy honey-sweetened yogurt, fresh strawberries, and crunchy Christmas Morning Granola packed with pistachios and cranberries. They’re quick, colorful, and perfect for holiday mornings or a Christmas brunch buffet!

- 3 cups plain Greek yogurt or your favorite kind of yogurt
- 3 Tbsp honey approximately, add more or less for your tastes
- 1 1/2 cups fresh strawberries chopped
- 1 1/2 cups Christmas Morning Granola or your favorite granola
- extra cranberries, pistachios, granola, honey, etc. optional, for garnish
In a small bowl, mix the plain yogurt with honey until smooth and lightly sweetened. Taste and adjust the sweetness to your preference.
Wash and chop the strawberries into small pieces. Pat them dry so your parfait layers stay clean and defined.
Spoon a layer of yogurt into the bottom of each glass or jar. Add a spoonful of strawberries, then a layer of Christmas Morning Granola. Repeat the layers until you reach the top. Top each parfait with a few more strawberries, a sprinkle of granola, and a drizzle of honey for shine. If you want an extra festive look, add a few pistachios or dried cranberries on top!
Serve same-day if possible. These will keep fine in the fridge, but the granola will absorb the moisture of the yogurt and become less crunchy as time goes on.
