These Christmas brookies are the ultimate holiday mash-up: a fudgy brownie base topped with a chewy cookie layer filled with red and green M&Ms and festive sprinkles. For the Brownie Layer
- 1 box brownie mix any brand will do
- The other ingredients your brownie mix calls for usually eggs, oil and water
For the Cookie Layer
- 1/2 cup (1 stick) unsalted butter softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 egg
- 1 tsp vanilla
- 1 1/4 cup flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup mini chocolate chips optional, but tasty
- 1/2 cup red and green M&Ms
- 1/4 cup Christmas sprinkles jimmies work best
Par Bake Brownie Layer
Preheat the oven to 350°F and grease a 9×13-inch baking pan (or line it with parchment paper for easier cleanup).
Prepare the brownie batter according to the instructions on the box. Spread evenly in your prepared pan.
Bake the brownie layer for 15–20 minutes so it’s set but not fully baked.
Prepare Cookie Layer
Beat butter and sugars until fluffy, then mix in the egg and vanilla.
Stir in flour, baking soda, and salt until dough forms.
Fold in chocolate chips, sprinkles, and some of the M&Ms. Same the rest of the M&M's to sprinkle on top.
Drop spoonfuls of dough over the brownies. No need to spread; it will spread as it bakes.
Bake and Top with M&Ms
Bake brownie and cookie layer for 15–20 minutes, then sprinkle the reserved M&Ms on top.
Continue baking another 15–20 minutes until golden on top and just set.
Let cool completely before cutting into squares.
