These brownie mix brookies are soft, chewy cookie brownies made with a boxed brownie mix and a simple cookie layer. They’re rich, chocolatey, easy to make, and perfect for parties, bake sales, potlucks, or a quick dessert when you want brownies and cookies in one.

- 1 box brownie mix 18-19 oz (look for one with instructions for a 9x13 pan)
- eggs, oil, water, etc. in the quantities specified on your brownie mix
- 1/2 cup 1 stick unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar light or dark
- 1 large egg
- 1 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup chocolate chips optional, but tasty!
- 1/2 cup red and green M&Ms plus a few extra for pressing on top
- 1/4 cup Christmas sprinkles jimmies work best
Preheat the oven to 350°F and grease a 9×13-inch baking pan (or line it with parchment paper for easier cleanup).
Prepare the brownie batter according to the instructions on the box. Spread evenly in your prepared pan.
Bake the brownie layer for 15–20 minutes so it’s set but not fully baked. The timing can depend on your brownie mix. I usually just look at the total time to bake a 9x13 pan according to the brownie mix instructions and bake it the total time minus the 20-ish minutes it takes to bake the cookie dough.
While your brownie layer bakes, prepare the cookie dough. Beat butter and sugars until fluffy, then mix in the egg and vanilla. Stir in flour, baking soda, and salt until dough forms.
Fold in chocolate chips and M&Ms (saving a few M&Ms for topping).
Drop spoonfuls of dough over the brownies. No need to spread; it will spread as it bakes.
Bake for 15–20 minutes, then sprinkle the reserved M&Ms on top. Continue baking another 5-10 minutes until golden on top and just set.
Let cool completely before cutting into squares.
