This cozy Biscoff apple crumble is the perfect fall dessert! Tart apples are tossed in cinnamon and brown sugar, then topped with a buttery crumble made from crushed Biscoff cookies and oats.

Ingredients
  

Apple Filling

  • 6 cups chopped apples Granny Smith and Honeycrisp mixed works well
  • 2 Tbsp granulated sugar
  • 1 Tbsp brown sugar
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tsp cornstarch
  • 1 tsp vanilla
  • 3-4 Tbsp Biscoff cookie butter spread adjust the amount to your tastes

Crumble

  • 1 cup old-fashioned oats
  • 3/4 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup crushed Biscoff (or Speculoos) cookies about 6-8 total cookies
  • 1/2 tsp cinnamon
  • pinch salt
  • 1/2 cup (1 stick) unsalted butter melted
  • 2 Tbsp Biscoff cookie butter optional, for drizzle

Instructions
 

Make Apple Filling

  • Preheat the oven to 350°F (175°C) and lightly grease an 8x8-inch or 9-inch round baking dish.
  • Make the filling: In a large bowl, toss the apples with sugars, cinnamon, nutmeg, cornstarch, and vanilla until evenly coated.
  • Heat the Biscoff for 5-10 seconds in the microwave to make it easier to stir. Gently mix in a few tablespoons of Biscoff spread with the flavors for extra gooey flavor.
  • Pour the apple mixture into the prepared baking dish and spread evenly.

Make The Crumble

  • In another bowl, combine oats, flour, brown sugar, Biscoff cookies, cinnamon, and salt.
  • Then, stir in the melted butter until a clumpy crumble forms.
  • Sprinkle the crumble evenly over the apples, pressing some bits together to make larger clusters.

  • Cool slightly before serving and adding drizzle
  • Drizzle on melted cookie butter: Heat a few tablespoons of Biscoff cookie butter in the microwave for 5-10 seconds with a bit of oil (I don't actually measure it, but I would say maybe a 1/2 teaspoon of oil) to make the texture thinner.
  • Quickly mix in the oil with the warmed Biscoff to create a drizzle. Drizzle your Biscoff over the top of your apple crumble.
  • Enjoy warm with vanilla ice cream, whipped cream, or even more cookie butter drizzled on top
