Apple Pie Muffins

These apple pie muffins are the perfect combination of muffins and apple pie. This simple recipe using real apple pie filling can be a breakfast and dessert treat.

Ingredients
  

Apple Pie Muffin Ingredients

  • 1 1/2 cups flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/3 cup vegetable oil or melted coconut oil
  • 1/2 cup milk
  • 1 tsp vanilla
  • 1 egg
  • 1 cup canned apple pie filling cut into small pieces

Streusel Ingredients

  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 tsp cinnamon
  • 1/4 cup cold butter cut into small pieces

Preparation

  • Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease with cooking spray.
  • Chop apple pie filling apples into small pieces.

Make Muffin Batter

  • In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.
  • In a separate bowl, whisk together the oil, milk, vanilla extract, and egg.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.

Fill Muffin Tins

  • Fill your muffin tins about halfway with batter
  • Carefully spoon a heaping tablespoon of apple pie filling in the middle of each muffin tin
  • Top off the top with a little more batter, until the tin is about ¾ full

Make Streusel and Top Muffins with Streusel

  • In a small bowl, mix together the flour, sugar, and cinnamon.
  • Add the cold butter pieces and use a fork or pastry cutter (or your fingers! I find that easiest) to blend the mixture until it resembles coarse crumbs.
  • Sprinkle the streusel topping evenly over the muffin batter.
  • Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the side of a muffin comes out clean. Keep in mind, if you use the center of the muffin, you'll get a toothpick full of apple pie filling and won't be able to tell if your batter is done. Aim for the sides.
  • Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
