These apple pie muffins are the perfect combination of muffins and apple pie. This simple recipe using real apple pie filling can be a breakfast and dessert treat.

Apple Pie Muffin Ingredients
- 1 1/2 cups flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar packed
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/3 cup vegetable oil or melted coconut oil
- 1/2 cup milk
- 1 tsp vanilla
- 1 egg
- 1 cup canned apple pie filling cut into small pieces
Streusel Ingredients
- 1/2 cup flour
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 tsp cinnamon
- 1/4 cup cold butter cut into small pieces
Make Muffin Batter
In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.
In a separate bowl, whisk together the oil, milk, vanilla extract, and egg.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
Fill Muffin Tins
Fill your muffin tins about halfway with batter
Carefully spoon a heaping tablespoon of apple pie filling in the middle of each muffin tin
Top off the top with a little more batter, until the tin is about ¾ full
Make Streusel and Top Muffins with Streusel
In a small bowl, mix together the flour, sugar, and cinnamon.
Add the cold butter pieces and use a fork or pastry cutter (or your fingers! I find that easiest) to blend the mixture until it resembles coarse crumbs.
Sprinkle the streusel topping evenly over the muffin batter.
Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the side of a muffin comes out clean. Keep in mind, if you use the center of the muffin, you'll get a toothpick full of apple pie filling and won't be able to tell if your batter is done. Aim for the sides.
Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
