4th of July Red Velvet Cookies

Ingredients
  

  • 1 box red velvet cake mix Any brand will do. I've used Betty Crocker and Duncan Hines and liked both.
  • 2 large eggs
  • 1/3 cup vegetable oil canola oil or melted coconut oil will work too
  • 1 tsp vanilla
  • 3/4 cup white chocolate chips
  • 3/4 cup blue M&Ms

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a large mixing bowl, combine the red velvet cake mix, eggs, oil, and vanilla extract. The dough will be thick, so don’t worry if it feels a little sticky or dense—that’s totally normal.
  • Fold in the white chocolate chips and most of the blue M&M’s. Save a small handful of chocolate chips and M&M’s to press into the tops of the cookies before baking. It makes them look bakery-worthy without any extra effort!
  • Use a cookie scoop or tablespoon to portion out the dough. Roll each scoop into a ball and place them a couple of inches apart on your prepared baking sheet. 
  • Gently press a few of the reserved M&M’s and and white chocolate chipsinto the tops of each dough ball for that extra pop of color.
  • Bake the cookies for 10-12 minutes, or until the edges are set and the centers look just slightly underdone.
  • Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack .
