  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 1–2 tablespoons milk or heavy cream
  • Valentine’s Day themed sprinkles (reds, pinks, hearts, nonpareils, anything festive!)

 

How to Make Valentine’s Day Sprinkle Sandwich Cookies

1. Make the buttercream.
In a mixing bowl, beat the softened butter until smooth and creamy. Add the powdered sugar, vanilla extract and 1 tablespoon of milk. Beat until light and fluffy, adding extra milk only if needed for a perfectly spreadable consistency.

2. Prepare your sprinkles.
Pour your Valentine’s sprinkles into a shallow bowl. This makes it easy to roll the edges once the cookies are assembled.

 

3. Pipe the frosting.
Transfer the buttercream to a piping bag fitted with a plain round tip or no tip at all. Pipe a generous swirl onto the bottom of one soft Chips Ahoy cookie. If you have a new piping bag, snip off the tip so that it’s about ¼” wide for best results).
  • You can adjust the thickness of your frosting.
    If you find that your frosting is too thick and doesn’t want to come out of the piping bag, add milk ½ tablespoon at a time. If it’s too thin and watery, add another spoonful of powdered sugar. Buttercream frosting is very adaptable.
  • Play with colors.
