  • 1 pan prepared brownies , cut into bite-size cubes (Homemade or boxed mix; both work well)
  • 2 cups sliced fresh strawberries
  • 8 oz cream cheese, softened
  • 2 cup Cool Whip or whipped topping
  • 6 tablespoons powdered sugar (optional, but helps smooth sweetness)
  • 1 teaspoon vanilla extract

Optional extras:

    • Strawberry syrup or sauce
    • Chocolate shavings or mini chocolate chips
    • Extra strawberry slices for garnish
    • Crushed freeze dried strawberries for a pretty topping

How to Make Strawberry Brownie Parfaits

You can still set this up like a mini parfait bar, but now with a richer mousse layer.

1. Prepare the brownies

  • Bake your brownies according to package or recipe directions (8×8 for thicker pieces works best). If you need a homemade recipe, I have one here.
  • Let them cool completely so they cut cleanly.
  • Cut the brownies into small cubes; ½–¾-inch pieces work best.

2. Make the cream cheese filling

  • Beat the softened cream cheese with powdered sugar (if using) until completely smooth.
  • Add the vanilla extract.
  • Fold in the Cool Whip until light and fluffy.
  • Keep chilled until ready to use. 
  • Put in a piping bag for easy layering

3. Layer the parfaits

  • Start with a layer of brownie cubes at the bottom of each glass.
  • Add a generous spoonful of the cream cheese filling.
  • Add a layer of sliced strawberries.
  • Repeat: brownie, filling, strawberries.

 

5. Chill or serve right away

  • For a softer, more blended texture, chill 30–60 minutes before serving.
  • For the crispest brownie texture, serve immediately after layering.

  • Serve fresh. These are best served within a couple hours of preparing. You can make them up to a day ahead, but I would worry that your strawberries might make the brownies kind of mushy (depending on how ripe they are).
  • Use homemade whipped cream for the top. I love, love, love homemade whipped cream, as opposed to the whipped cream you can get from an aerosol can. It’s creamier, thicker and it lasts way longer. Just beat 1 cup heavy cream, ¼ cup powdered sugar and 1 tsp vanilla until soft peaks form (Somewhere between “soft peaks” and “stiff peaks” is my go-to). Then, put it in a piping bag with a star tip (I use the Wilton 1M tip) for pretty swirls.
  • Use just Cool Whip. If you’re short on time and don’t feel like softening your cream cheese, you can definitely just use Cool Whip and nothing else for the filling.
  • Bake the brownies a day ahead of time. These parfaits are actually easier to make with brownies that trend towards getting a bit too dry. It makes the brownies easier to cut into cubes, and the cream cheese filling and juicy strawberries still keep things quite fresh, so no one will notice.

I recommend assembling them no more than 4–6 hours ahead. The brownies will soften as they sit with the filling and berries. If you like a very soft, trifle like texture, overnight is fine. For the best balance, prep all the parts ahead, then layer a few hours before serving.  

What kind of brownies work best?

Fudgy brownies hold their shape better than cakey ones and give a richer texture. Boxed brownie mix works perfectly for an easy Valentine’s day treat last-minute. Just bake until slightly underdone for extra fudgy cubes.  

Can I use frozen strawberries?

Fresh strawberries are best because they keep their texture in the parfaits. Frozen strawberries get really mushy when you defrost them.

I’m positive that if you used smaller portions, you could get 6-8 regular-sized parfaits and even 12 or more small parfaits.
