Jump to RecipeHow to Get Yummy, Moist Pumpkin Bread
Have you ever bitten into a slice of pumpkin bread only to find it dry and crumbly? Fret not! Achieving a moist texture in your baked goods isn’t as tricky as it might seem. The secret lies in a few key steps that can elevate your pumpkin bread to a whole new level of deliciousness.
Embrace the Power of Buttermilk
Buttermilk might just be the unsung hero of moist baking. Its slightly acidic nature helps tenderize the crumb and retain moisture, resulting in a pumpkin bread that’s soft and sumptuous. Don’t worry if you don’t have buttermilk on hand—I didn’t! You can easily make a DIY version by mixing a cup of regular milk with a tablespoon of vinegar or lemon juice.
Don’t Over-mix the Batter
One of the most common mistakes in baking is over-mixing the batter. When it comes to pumpkin bread, a light touch is your best friend. Gently combine the wet and dry ingredients until just incorporated. This ensures that your texture is soft but not chewy.
Add Straight Nutella
I did toy with making some kind of Nutella buttercream or Nutella frosting to fill this bread. However, Nutella itself is so delicious, it really doesn’t need anything else! Plus, I think the just plain Nutella makes the pumpkin bread with Nutella filling even more moist and rich.
The Secret to Baking Delicious Pumpkin Bread
Now that we’ve covered the basics of moist baking, let’s delve into the heart of this recipe—the secret to baking a pumpkin bread that’s not only moist but also bursting with flavor.
The Flavor Medley
Pumpkin and Nutella might seem like an unexpected duo, but trust me, they’re a match made in dessert heaven. The warm, earthy notes of pumpkin harmonize beautifully with the luscious, chocolate-hazelnut goodness of Nutella. It’s a symphony of tastes that’ll have your taste buds dancing with delight.
Spices and Everything Nice
The spice blend in this recipe is what truly brings the pumpkin flavor to life. Cinnamon and nutmeg create a warm and aromatic backdrop that complements the pumpkin’s natural sweetness. Be sure to use freshly spices for an extra punch of flavor. Spices can lose their flavor after a year or so!
How to Make Pumpkin Bread with Nutella Filling
And now, the moment we’ve all been waiting for—the step-by-step guide to crafting your very own Pumpkin Bread with Nutella Filling. Get your apron on and let’s dive in!
Ingredients:
- 1 ¾ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ cup butter, melted
- ½ cup granulated sugar
- ½ cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups pumpkin puree
- ⅓ cup buttermilk
- ½ cup Nutella (for filling) + More for Nutella swirl on top
Instructions:
Preheat and Prep: Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
Beat the Sugars and Butter: In a large mixing bowl, beat together the granulated sugar, brown sugar, and melted butter until well combined. Make sure your butter isn’t too hot before going on to the next step!
Add Eggs, Vanilla and Pumpkin: Beat in the eggs one at a time, followed by the vanilla extract. Mix in the pumpkin puree until the mixture is smooth.
Alternate Dry and Wet: Gradually add the dry flour mixture and buttermilk to the wet ingredients, beginning and ending with the dry mixture. Mix until just combined; avoid over-mixing.
Layer the Batter: Pour 1/2 of the pumpkin batter into the prepared loaf pan. Spoon Nutella over the batter, avoiding the edges. Gently spread the Nutella, leaving a border of pumpkin batter. Then, pour the rest of the batter on top.
Nutella Swirl: Add dollops of Nutella to the top of the bread batter and swirl around with a knife.
Bake to Perfection: Place the pan in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted into the middle comes out clean. Make sure you stick your toothpick in the middle, because the edges may look done while your middle is still raw.
Cool and Enjoy: Once baked, allow the pumpkin bread to cool in the pan for about 15 minutes. Then, transfer it to a wire rack to cool completely before slicing. Each slice reveals a delightful swirl of Nutella goodness, nestled within the moist pumpkin bread.
