What is Biscotti?

Biscotti is an Italian delight that has found its way into the hearts of people worldwide. Derived from the word “biscotto,” which means “twice-baked” in Italian, biscotti are hard, crunchy cookies that are traditionally enjoyed by dunking them into your favorite hot beverage. 

Now, before I ever made my first batch of biscotti, I was a little intimidated to make this seemingly fancy breakfast pastry. Turns out: It’s super easy!! If you can bake cookies, you can bake biscotti. Biscotti are really just cookies that you bake twice, and slowly at a low temperature. Honestly, they’re hard to mess up, and always taste delicious when dunked in some coffee.

Techniques for Baking Good Biscotti

Before we jump into our delicious Oatmeal Chocolate Chip Biscotti recipe, let’s explore some key techniques for baking these goodies to perfection:

  • Balancing Wet and Dry Ingredients: Achieving the right balance between wet and dry ingredients is crucial for most baking. However, because you want a crisp, crunchy biscotti, too much moisture can lead to a dense texture, while too little can make your biscotti dry. Find the perfect ratio to achieve that ideal crispness by following the recipe below.
  • Shaping the Dough: Biscotti dough is typically shaped into a long, not-to-tall loaf when it is first baked. The good news is: it won’t show in the end if you make an ugly loaf at first! The key is, you need to make your loaf the same thickness throughout. Make sure the ends aren’t too much thinner than the middle, or you’ll end up with inconsistent doneness at the end
  • Baking Times: The first baking is when the biscotti loaf takes shape. The second baking crisps them up. Biscotti comes out best when baked for a longer time at a lower temperature. When you first take them out of the oven, they may seem a little soft, but they’ll continue to firm up as they cool.

How to Make Oatmeal Chocolate Chip Biscotti

Now, let’s roll up our sleeves and bake up a batch of Oatmeal Chocolate Chip Biscotti that’ll have you reaching for more!

Ingredients:

  • 1 ¾ cups all-purpose flour
  • 1 cup old fashioned oats
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • ½ cup mini chocolate chips

Instructions:

  • Preheat and Prep: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix Dry Ingredients: In a medium bowl, mix together the flour, oats, baking powder, baking soda, and salt. Set aside.

  • In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

  • Add Eggs and Vanilla: Beat in the eggs, one at a time, followed by the vanilla extract, until well combined.

  • Combine Wet and Dry. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  • Shape the Dough. Divide the dough in half and shape each half into a loaf, about 12 inches long and 2 inches wide. Place the loaves on the prepared baking sheet, leaving space between them.

  • First Bake: Bake in the preheated oven for about 25 minutes, or until the loaves are golden brown and slightly firm to the touch. Remove from the oven and let them cool for about 10-15 minutes.
  • Turn down oven temperature to 325
  • Slice and Second Bake: Using a serrated knife, slice the loaves diagonally into ½-inch thick slices. Arrange the slices cut-side down on the baking sheet. Bake for an additional 10-15 minutes. Then, flip pieces over so that the part that was facing down is now up. Bake for another 10 minutes.
  • Cool and Enjoy: Remove the biscotti from the oven and let them cool completely on a wire rack.

Oatmeal Chocolate Chip Biscotti

This crunchy and sweet oatmeal chocolate chip biscotti makes the perfect breakfast treat.

Ingredients
  

  • 1 3/4 cup flour
  • 1 cup old fashioned oast
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 1/2 tsp vanilla
  • 1/2 cup mini chocolate chips

Instructions
 

  • Preheat the oven to 350°F and line a baking sheet with parchment paper
  • In a medium-sized mixing bowl, whisk together flour, oats, baking powder, baking soda and salt.
  • In a larger mixing bowl, cream butter, granulated sugar and brown sugar until light and fluffy.
  • Mix in eggs and vanilla with butter and sugar until well-combined.
  • Slowly mix in the dry ingredients with the wet ingredients. Mix until well combined.
  • Mix in chocolate chips until evenly distributed through the dough.
  • Divide your dough in half. Form dough into two loaves that are about 12 inches long, 2 inches wide and 1 inch tall on your prepared baking sheet. Leave space between and around the loaves on the baking sheet, as they will expand.
  • Bake your biscotti loaves for about 25-30 minutes. Then, take out of the oven and let cool for about 10-15 minutes.
  • Lower your oven temperature to 325° F.
  • Carefully slice your biscotti loaves diagonally into 1/2-inch thick pieces. They will all be different lengths (See picture above). Place the biscotti pieces with the cut side down on the baking sheet. Bake for another 10 minutes.
  • Remove biscotti from the oven and flip all the pieces over so that the side that was down is now up. Bake for another 10 minutes.
  • Let cool completely. They will continue to get firmer and crunchier as they cool.
  • Enjoy with a nice cup of coffee, or eat alone as an afternoon snack!
