**Cake Mix Note: Gluten free cake mix box sizes and yields vary considerably by brand. The Aldi gluten free yellow cake mix I used made 12 cupcakes. Some larger mixes claim to make up to 24 cupcakes, although I usually get 18. This recipe’s coffee soak and frosting should be enough for approximately 12 to 18 cupcakes, depending on how generous you are with the frosting.

For the Coffee Soak  

  • 1/2 cup strong brewed coffee or espresso, hot  
  • 2 tablespoons granulated sugar  
  • 1 teaspoon vanilla extract  
  • Optional; 1/2 teaspoon rum extract  

For the Mascarpone Frosting  

  • 8 ounces mascarpone cheese, cold  
  • 1 cup heavy whipping cream, cold  
  • 1/2 cup powdered sugar  
  • 1 teaspoon vanilla extract  

For Topping  

  • Unsweetened cocoa powder, for dusting  

How to Make Gluten Free Tiramisu Cupcakes  

I love this recipe because it uses a box of cake mix and still looks like a bakery treat. Here is how I put it all together.  

Make the Cupcakes

  1. Preheat the oven according to the cake mix package directions. Line one or two muffin pans with 12 to 18 cupcake liners. Depending on the brand and size of the cake mix, you may get anywhere from 12 to 18 cupcakes, or occasionally more.
  2. Prepare the batter as directed on the box. Use milk instead of water, when permitted, for a richer flavor.
  3. Fill the liners about two-thirds full.
  4. Bake according to the package directions, until a toothpick inserted in the center comes out clean.
  5. Cool in the pan for 10 minutes, then transfer the cupcakes to a wire rack.

What brand of cake mix should I use?

Really, any gluten free yellow cake mix should work. I will say, I used the Aldi brand and it only makes 12 cupcakes, which left me with some extra frosting. A Pillsbury gluten free cupcake mix says it makes 24, but I usually only get 18. I had enough frosting to generously (and I mean generously!) frost 16 cupcakes.

How should I store leftover tiramisu cupcakes?

Because of the mascarpone and cream, I store them in an airtight container in the refrigerator. They usually keep well for 2 to 3 days. Before serving leftovers, I like to let them sit at room temperature for about 10 to 15 minutes.  

Can I use a different cake mix flavor?
