  • 1 tbsp oat flour (or all-purpose flour)
  • 1 tbsp brown sugar
  • 1/4 tsp baking powder**
  • Pinch of salt
  • 3 tbsp milk
  • 1 tbsp melted butter or coconut oil
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon

**Note about baking powder: If your mug cake rises too much or overflows, try omitting the baking powder next time. Some protein powders don’t need it for lift. I used Optimum Nutrition whey protein, and it baked perfectly without any baking powder.

Streusel:

  • 1 tsp butter
  • 1 tbsp oat flour
  • 1 tsp brown sugar
  • Pinch of cinnamon (optional)

 

How to Make Coffee Cake Protein Mug Cake

1. In a microwave-safe mug, combine the protein powder, oat flour, brown sugar, baking powder, salt, and cinnamon. Stir until dry ingredients are evenly mixed.

2. Add the milk, melted butter or coconut oil, and vanilla extract. Stir until the batter is smooth and lump free, scraping the sides of the mug.

3. Make the streusel by mixing the butter, oat flour, brown sugar, and cinnamon in a small bowl until crumbly. You can use a small fork or your fingers for best results.

4. Microwave your mug cake about halfway (25-30 seconds)

5. Sprinkle the streusel evenly over the top of the batter in the mug.

6. Microwave until done, which should be another 25-30 seconds. Stop at 25 seconds and start checking. I usually add 10 seconds at a time after that until it’s done, but if your microwave is particularly strong, I would recommend an extra 5 seconds at a time.

7. Let the mug cake cool for 1 to 2 minutes to cool and enjoy fresh of out the mug.

  • If your mug cake rises a little too much or looks like it’s about to overflow, your protein powder might not need baking powder at all! Different brands react differently, so if that happens, just skip the baking powder next time. You’ll still get a delicious, fluffy cake without the drama.
  • Microwaves vary a lot. If the center is still wet after 60 seconds, use 10-second bursts to avoid overcooking and a rubbery texture.

  • If you don’t have oat flour, but you do have oats and a bullet blender, you can just grind up some old fashioned oats in the blender for a few seconds and that’s it! You’ll have nice, fluffy oat flour.
