The holiday season is full of cookies, cakes, and pies, but sometimes the best recipes are the easiest ones. These Christmas Biscoff truffles are one of my favorite easy Christmas desserts because they come together in minutes, look gorgeous, and taste great. With just four ingredients, you can whip up a batch of sparkly truffles that look like little ornaments.

Ingredients for Christmas Biscoff Truffles

You only need a handful of ingredients to make these festive truffles:

  • 1 cup Biscoff cookie butter (smooth)
  • 4 oz cream cheese, softened
  • 2 cups powdered sugar
  • Christmas-colored sanding sugar (for rolling) 

 

How to Make Christmas Biscoff Truffles

Step 1: Mix the filling
In a large bowl, beat together the softened cream cheese and cookie butter until smooth and creamy. Gradually mix in the powdered sugar until a thick dough forms.

 

Step 2: Shape the truffles
Scoop out tablespoon-sized portions and roll into smooth balls between your palms. Place on a parchment-lined baking sheet. You can use a melon baller or a small cookie scoop to get even-sized balls.

Step 3: Coat in sanding sugar
Roll each truffle in red sanding sugar until evenly coated. The bright, sparkly finish gives them a festive holiday look.

Step 4: Chill
Refrigerate the truffles for at least 20 minutes to set before serving. Keep stored in the fridge until ready to enjoy.

 

Pro Tips for the Best Truffles

  • Soften the cream cheese – Cold cream cheese can leave lumps, so let it sit out for at least 20–30 minutes before mixing. It’s definitely worth it!
  • Chill before rolling – If your dough seems too sticky at first, chilling makes it easier to handle. You can pop it in the fridge for around 30 minutes to help it firm up and make it easier to work with. If it’s still too sticky, try adding a bit more powdered sugar.
  • Switch up the coating – Try green sanding sugar, gold sugar, or even sprinkles for a mixed platter of Christmas colors. You can also melt some chocolate with a bit of coconut oil and coat them in chocolate.
  • Make ahead – These are perfect to prep the night before a holiday gathering since they keep well in the fridge.
  • Serve chilled – Because of the cream cheese, these hold their shape best when served cold.

Can I make these ahead of time?
Yes! You can make them 2–3 days in advance. Just keep them in an airtight container in the fridge until serving.

They do. Since the filling has cream cheese, they should be kept chilled for food safety and texture.

Can I freeze Christmas Biscoff truffles?
For sure! Freeze on a tray until solid, then transfer to a freezer bag. They’ll last up to 2 months. Thaw in the fridge before serving.

Can I use any cookie butter brand?
Yes, any smooth cookie butter works. I like the Speculoos cookie butter from Trader Joe’s, but if you don’t have a Trader Joe’s near you, the Lotus brand Biscoff also works great. You could even try crunchy if you wanted to!
