Pro Tips

  • Use clear glasses or jars. The red, white, and green layers are so pretty in a clear glass. Also, try to keep the sides of the glasses clean as you add ingredients. That’s the secret sauce for getting those pretty layers to show through. If you get a smudge of yogurt running down from the top of your glass, try to wipe it clean before adding mroe.
  • Prep ahead. You can mix the yogurt and chop the strawberries the night before. Store separately and assemble in the morning for the freshest taste.
  • Make it a brunch bar. Set out bowls of yogurt, granola, and fruit so everyone can build their own parfaits. It’s such a fun and easy idea for a Christmas brunch buffet.
  • Switch it up. Try vanilla or coconut yogurt for extra flavor, or swap strawberries for raspberries or pomegranate seeds for a slightly tart twist. You can even add some kiwis for some extra green if you like.

FAQs

Can I make these parfaits ahead of time?
You can assemble them up to a few hours in advance if you keep them chilled. Just try to serve them as soon as possible so the granola stays crunchy. You can also keep some granola in a separate bowl to add on top when serving for some extra crunch.

What kind of granola works best?
I love using my Christmas Morning Granola because the pistachios and cranberries fit the holiday colors perfectly. You can also use store-bought granola if you have a favorite.

Can I make these dairy-free?
Absolutely! Just use a dairy-free yogurt (like almond or coconut yogurt) and make sure your granola is also dairy-free.

How many servings does this make?
This recipe makes about 2-3 parfaits, depending on the size of your jars or glasses. I used really large cups (like 12 ounces) and got 3 large parfaits that were probably much larger than they needed to be.
