Did you Know Oreo Cookies are Already Vegan?
First things first – did you know that Oreo cookies are vegan-friendly? That’s right! These beloved sandwich cookies have been a guilty pleasure for many, and the good news is, they’re entirely free of animal products. So, it’s time to celebrate the fact that we can turn this iconic treat into a luscious, plant-based dessert that satisfies all those sweet cravings.
Special Tools Needed for Making Filled Cupcakes
Before we get our hands dirty (with cocoa, of course), let’s talk about the special tools you’ll need to create these filled cupcakes. Filled cupcakes are a great way to up your cupcake game! And, they are really quite simple to make with just a few tools.
1. Cupcake Corer: To make room for the creamy Oreo creme filling, you’ll want a cupcake corer. If you don’t have one, a small knife will do the trick, but a corer makes the process way easier. You can pick one up at Michael’s like I did, or Target sometimes has them, too.
To core your cupcake, you just place the corer directly over the center of your baked, cooled cupcakes and gently push down. Then, you pull the corer out, and voila! A hole in the middle of your cupcake to fill with delicious filling!
Sometimes to make extra room for even more filling, I’ll use a baby spoon (like an actual baby spoon from when my son was a baby!) to carve out a little bit more, just in case I misjudge how far down the cupcake corer actually went.
2. Piping Bag: For that professional touch when topping your cupcakes with frosting, a piping bag is your best friend. It gives you precision and is an easy way to get effortlessly pretty cupcakes.
For this recipe, I used a plain round tip for frosting the tops of the cupcakes. The frosting has real Oreo chunks in it, and I didn’t want to clog up a star piping tip with Oreo. It probably would have been fine if I had used really, really fine Oreo crumbs, but I was feeling lazy and did not blend up my Oreo crumbs to make them fine.
Which brings me to my final special tool…
3. Bullet Blender or Food Processor
I would recommend that you grind up your Oreos for your frosting in a small bullet blender or a small food processor. This isn’t a must, but it would have made my life easier if I had done it! You want your Oreo crumbs to be super small in order to fit through a piping tip to frost your cupcakes. I thought I had sufficiently crushed my Oreos by hand, and I still clogged up my piping tip while frosting these.
Now that we have our tools lined up, let’s jump into the heart of the matter – the recipe!
Ingredients for Vegan Oreo Cupcakes with Oreo Filling and Frosting
Vegan Oreo Cupcake Ingredients:
– 1 box of your favorite vegan chocolate cake mix
– Ingredients required for the cake mix (Check the box. I replace any water with coffee, because I think the coffee brings out the chocolate flavor more)
Oreo Creme Filling Ingredients:
– 1/2 cup vegetable shortening, softened
– 1 cup powdered sugar
– 1 teaspoon vanilla extract
– Oreo creme filling scraped from 12 Double Stuf Oreos
Oreo Frosting Ingredients:
– 1 cup vegetable shortening
– 4 cups powdered sugar
– 2 teaspoons vanilla extract
– 1/4 cup non-dairy milk + a little for texture (I used coconut milk from a can)
– Oreo crumbs from your 12 Double Stuf Oreos (crushed finely, use a blender if possible)
How to Make Easy Vegan Oreo Cupcakes with Oreo Filling and Frosting
1. Prepare the Cupcakes:
– Preheat your oven according to the cake mix instructions.
– In a large bowl, combine the chocolate cake mix and the required ingredients, following the instructions on the box.
– Replace any water your cake mix calls for with coffee to enhance your chocolate flavor.
– Line your muffin pan with cupcake liners and fill each cup about two-thirds full with the batter.
– Bake according to the package instructions, and let them cool completely before filling and frosting them.
2. Create the Oreo Creme Filling
– Scrape the filling out of 12 Double Stuf Oreos. Put the filling in one bowl, and set the cookies aside in another bowl to use for your frosting.
– In a mixing bowl, whip your vegetable shortening, powdered sugar, vanilla and Oreo filling together until smooth
– Once the cupcakes are completely cooled, use a cupcake corer to create a hole in the center of each cupcake.
– Fill a piping bag with the Oreo creme filling and pipe it into each cupcake. You can also use a baby spoon if you have one on hand, too. If it looks a little sloppy, that’s okay! You’re going to put frosting over it, anyway.
3. Whip Up the Oreo Frosting
– Crush your Oreo cookies into fine crumbs, preferably using a blender.
– In a large mixing bowl, beat together vegetable shortening, powdered sugar, vanilla, Oreo crumbs and ¼ cup of dairy-free milk. Mix until smooth and there are no lumps of powdered sugar or vegetable shortening. This could take a few minutes.
-If your frosting seems too thick, add more dairy-free milk a tablespoon at a time until you have a good consistency for your frosting.
– Transfer the frosting to a piping bag and frost each cupcake with a generous swirl. I used a plain round tip for these.
And that’s it! These easy vegan Oreo cupcakes will be beloved by vegans and non-vegans alike. They really taste just like Oreos in soft, creamy cupcake form!
