Today, I’m excited to share with you three different flavors for strawberry cake pops! And the best part is, all of these cake pops are made with cake from a box! We’re going to dive into the world of cake pops with three delightful flavors: Chocolate Covered Strawberry, Strawberry Cream Cheese, and Strawberry Lemonade. So, let’s get started on this delightful journey!

 

General Steps for Making Cake Pops

Before we dive into the specific flavors, let’s start with the basics. Making cake pops is relatively easy. It is, however, a little time-consuming.

My secret for “lazy” cake pops is to use a boxed cake mix for the cake, but to always use homemade frosting. The frosting absolutely makes the dessert (in my humble opinion)! Therefore, save yourself the time and use a boxed cake mix.

These are the basic steps for making cake pops. You can apply these steps to all three flavors of cake pops described in this post! The basics will not change.

Ingredients/Supplies:

– 1 baked strawberry cake mix, prepared according to the instructions on the box (I used Duncan Hines)

– Homemade frosting 

– Candy melts or melting chocolate for coating

Lollipop sticks

– Sprinkles or toppings of your choice (optional)

Styrofoam block (for drying), or a cake pop stand

Instructions:

  1. **Crumble the Cake:** First, you’ll need to crumble the baked cake into fine crumbs. I like to use a food processor to make it easier. When I use an entire strawberry cake mix from a box, I actually have to divide up the cake into a few batches with my food processor. One boxed cake mix will make around 4 dozen round cake pops in the end!
  1. **Mix with Frosting:** Add about half of your frosting to the crumbled cake, and mix until you achieve a dough-like consistency. If it’s too crumbly and dry, you can add more frosting, a spoonful at a time. Start with a smaller amount of frosting and work your way up! If you add too much frosting at once, your cake pops will be runny and fall apart. And the only solution to that would be to add more cake.
  1. **Shape the Cake Balls:** Roll the mixture into small, equally sized balls and place them on a baking sheet lined with parchment paper. Let them chill in the fridge or freezer (I prefer freezer, because then you don’t have to worry as much about their shape holding when you’re decorating them.)

  1. **Insert Lollipop Sticks:** Melt  the melting chocolate or candy melts according to the package instructions and dip the end of each lollipop stick into it. Then, insert the coated end into a chilled cake ball. This will help the cake pop stay on the stick. 
  1. **Coat with Chocolate:** Dip each cake pop into the melted chocolate, allowing any excess to drip off. I like to add a bit of coconut oil to my melting chocolate. It helps the excess chocolate slide off the cake pops and makes the process go a little faster. You don’t want your chocolate to be watery! I usually add a teaspoon of coconut oil at most.

  1. **Add Toppings:** Before the coating hardens, sprinkle on your favorite toppings if using them.
  2. **Dry and Store:** Stick the cake pops into a styrofoam block to dry. When set, store in the fridge to keep them fresh.

How to Make Chocolate Covered Strawberry Cake Pops

One of the most classic and delightful combinations is chocolate and strawberries. This flavor combination will make your taste buds do a happy dance. Here’s how you can whip up Chocolate Covered Strawberry Cake Pops:

Ingredients:

– 1 baked (and fully cooled!) strawberry cake from a box mix

Chocolate Buttercream:

-1 cup butter, softened

-3 1/2 cups powdered sugar

-1/2 cup cocoa

-¼ cup to ½ cup heavy whipping cream (Can also use milk, but start with less and add more for texture)

Instructions:

  1. Crumble up your cake into fine crumbs.

  1. Place butter, powdered sugar, cocoa and ¼ cup heavy whipping cream (If you use milk instead, start with 2 Tbsp) in a large mixing bowl. Using a stand mixer or a hand electric mixer, beat all of the ingredients until smooth. If the frosting seems too thick, add more whipping cream (or milk).

  1. Start with about half of your frosting and add it to your cake crumbs. Use an electric mixer to mix cake and frosting together. You want a Play Dough-like consistency. If the mixture is too crumbly and dry, add a little more frosting about ¼ cup at a time. You will most likely use about ⅔ to ¾ of your frosting.
  1. Follow the steps above for forming, chilling and decorating your cake pops. I decorated mine with plain milk chocolate candy melts on the outside with a little bit of a pink drizzle. You can buy pink melting chocolate at craft stores, or you can buy white melting chocolate and color it pink.

How to Make Strawberry Cream Cheese Cake Pops

If you’re a fan of creamy, luscious desserts, these Strawberry Cream Cheese Cake Pops are a must-try. The cream cheese adds a delightful richness that pairs perfectly with the sweetness of strawberries. 

Ingredients:

– 1 baked (and fully cooled!) strawberry cake from a box mix

Cream Cheese Frosting:

-8 oz cream cheese, softened

-½ cup butter, softened

-4 cups powdered sugar

-1 ½ tsp vanilla

Instructions:

  1. Crumble up your cake into fine crumbs.

  1. Place cream cheese, butter, powdered sugar and vanilla in a large mixing bowl. Using a stand mixer or an electric hand mixer, beat all of the ingredients together until smooth.

For a refreshing and zesty twist on the classic strawberry cake pops, try making Strawberry Lemonade Cake Pops. They’re perfect for a hot summer day or whenever you’re craving a tangy, fruity treat.

Ingredients:

– 1 baked (and fully cooled!) strawberry cake from a box mix

Lemon Buttercream:

-1 cup butter, softened

-4 cups powdered sugar

-1 tsp lemon extract

-2 Tbsp lemon juice

Instructions:

  1. Crumble up your cake into fine crumbs.
