Today, I’m going to show you how to make the most cheerful and scrumptious Funfetti Cake Pops! And the best part is: you can use a box mix to make them! What is Funfetti?

Before we dive into the delicious world of Funfetti cake pops, let’s talk about Funfetti itself. Funfetti is basically a sprinkle party in a baking mix! It’s a cake mix that’s jazzed up with colorful rainbow sprinkles, which add a burst of vibrant colors and a delightful hint of sweetness to your baked goods. Whether you’re a kid or a kid at heart, Funfetti is the joy of carefree youth in every bite.

I used the Pillsbury brand Funfetti mix for my cake pops, with homemade cream cheese frosting. I can definitely get on board with using a boxed cake mix for certain (honestly, most!) things. But my frosting always, always has to be homemade. Homemade frosting just tastes better to me!

Pro Tips for Funfetti Cake Pops

Add extra sprinkles!

If you want to, of course. I found that the pretty Funfetti sprinkle/colored part of my cake kind of disappeared once I crumbled up the cake for the cake pops. Thus, I added some more sprinkles to my cake pop dough for fun! It’s not really necessary, as your cake pops will be coated in chocolate in the end, but I liked it. You can also decorate the outside of your cake pop with sprinkles if you want to.

Chill your cake pops in the freezer.

More on where exactly this step falls in the cake pop-making process below. However, in my opinion, it makes the process a lot easier if your cake pop balls are chilled in the freezer. They hold their shape a little bit better that way when your coating them in chocolate in the end.

Add a little coconut oil to your melting chocolate.

And while we’re at it, use real melting chocolate or melting candies (Those terms tend to be used interchangeably). I found these adorable Funfetti candy melts at Michael’s, which is why I decided to make Funfetti cake pops. I love the Sweet Tooth Fairy brand of melting chocolate!! My only small complaint (And it’s not just this brand! I’ve seen it with others) is that it’s a little too thick for easy cake pop dipping and decorating.

To help with that, I add a little bit of coconut oil to my melted chocolate to make the texture just a little bit thinner. I don’t actually measure it, but I would say no more than a teaspoon! You can always start small and add more, but you don’t want to add a ton of coconut oil and end up with watery chocolate that won’t stick to your cake pops.

How to Make Funfetti Cake Pops

Cake pops are basically balls of cake and frosting mashed together, put on a stick and then coated in chocolate. They’re really quite simple to make, but they do take some time. However, they are classy enough for parties, gifts, or just as a fun way to enjoy cake without committing to a whole slice. Here’s a brief overview of the cake pop-making process:

Ingredients:

– Funfetti cake mix, prepared according to the box instructions and cooled (I used the Pillsbury brand)

– Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • ½ cup butter, softened
  • 4 cups powdered 
  • 2 tsp vanilla
  • 1-2 tsp milk (for texture if your frosting ends up too thick)

– Candy Melts. I used these awesome Funfetti candy melts

Lollipop Sticks: To transform your cake bites into cute pops.

– Sprinkles (optional)

Steps:

Bake your cake and let it cool completely. I usually make my cake a day ahead of time if I remember to. The other steps in making cake pops are more time-consuming, so I like to be prepared and at least have my cake ready to go!

Crumble up your cake. I like to use a food processor to get really fine crumbs. Plus, it’s just easier than using my hands.

Make your frosting. Place all of the frosting ingredients except the milk in a bowl, and beat with an electric mixer or stand mixer until everything is smooth. If you feel your frosting is too thick and lumpy, you can add a little milk a teaspoon at a time.

Add about ⅓ of your frosting to your cake crumbs and mix with an electric mixer or stand mixer. Make sure you start with a little frosting and then add more as you keep going. You can always add more frosting, but if you add too much at once, your cake pops will be runny and you’ll have to start over with a fresh cake.

For added aesthetic, you can also add more rainbow sprinkles to your cake and frosting mixture. This will really make the Funfetti part of your cake pops stand out.

You want to mix your cake and frosting until it’s almost like Play Dough, or thick cookie dough.

Form your cake pops, and lay them on a cookie sheet (or a flat plate) lined with parchment paper. Stick your cake pops in the freezer for at least 30 minutes to set and chill.

Melt your melting chocolate according to the package instructions. If your melting chocolate is really thick, try adding a little bit of coconut oil to it and mixing it in really well. This will give the melting chocolate a smoother texture, and will make it easier to work with.

Stick just the end of your lollipop stick in the melted chocolate, and then stick it straight down the middle of your chilled cake pop. The chocolate kind of acts like a glue to hold the cake pop to the stick.

Carefully, coat your cake pop in the melted chocolate, and let the excess chocolate kind of run off. This is why coconut oil is helpful! I like to put my cake pop in the bowl, and then use a spoon to kind of pour chocolate over the cake pop. Then, you just give the cake pop a little spin, let the excess chocolate drip off, and you’re good to go.

If decorating your cake pop with sprinkles, do that while the chocolate is still wet. I skipped this part, because my Funfetti chocolate melts already had cute little sprinkles in them.

Place your cake pops upright to dry. I use these styrofoam blocks that I also bought at Michael’s. Or, you can use an actual cake pop stand.
