- Don’t overmix the dough: The very first time I tried to make scones, the recipe and tutorial I had said to knead my scone dough five times (I kid you not!), and my scones ended up coming out like sad, hard pancakes. Scones are like biscuits—you want to mix the dough just until it comes together. If your work your scone dough too much, it just won’t come out right. Make your life easier and don’t overthink scones!
- Chill your dough: I know, I know. You want to bake those scones right away and be done with it! I totally get that! And it can work, but you won’t have those fluffy cloud-like scones you see in magazines if you skip chilling your dough. I usually chill my dough in the freezer to get the best “bang for my buck” on time, ad I usually just let it chill while my oven preheats so that I’m not really wasting too much time waiting for it to chill.
- Use Clean Parchment Paper: I like to chill my scone dough on a cookie sheet lined with parchment paper, because that gives me a clean, flat surface to chill my dough on. However, if you do it this way, make sure you bake your scones one a clean piece of parchment paper. It can be super tempting to reuse parchment paper when baking! Sometimes I’ll do it with cookies. However, I would not do it with scones. Every time I try to scrape by reusing parchment paper with scones, I inevitably set off the smoke detectors. There’s just something about scone dough where it burns super easily, which is why you want a clean piece of parchment paper without any dough residue on it.
