What are Truffles?

Before we dive into the exquisite realm of cookie butter truffles, let’s take a quick moment to talk about what truffles are. No, we’re not talking about the fungi found nestled beneath oak trees! We’re talking about their sweet namesake – the luscious, bite-sized dessert wonders that are beloved by all bougie people with a sweet tooth.

Truffles are essentially small, round, and delicious candies made from a combination of chocolate, cream, and butter. They often serve as a canvas for creativity, allowing bakers and dessert lovers to experiment with different flavors, coatings, and fillings. From classic dark chocolate truffles to more adventurous variations like fruity or nutty ones, the possibilities are endless.

How Are Cookie Butter Truffles Unique?

If you’re wondering what makes these truffles stand out from the crowd, let me tell you, it’s all about that magical ingredient: cookie butter.

Cookie butter, for those of you who don’t know, is like a dreamy spreadable version of speculoos cookies. It’s made from crushed cookies that are transformed into a smooth, velvety paste that resembles peanut butter. The result is a blend of flavors and textures that hits all the right notes – a harmonious marriage of sweetness, warmth, and a hint of that nostalgic cookie crunch.

How to Make Cookie Butter Truffles

Now, the moment we’ve all been waiting for – let’s roll up our sleeves and make some of these scrumptious cookie butter truffles ourselves. Trust me, this process is mind-blowingly easy!

Ingredients:

  • ½ cup cookie butter (I prefer the Trader Joe’s brand, but Biscoff is good too. You can usually find Biscoff in the same aisle as peanut butter in most grocery stores,)
  • 2 oz. cream cheese (softened)
  • ½ cup powdered sugar
  • Melting chocolate (Choose any color you like. I like the Sweet Tooth Fairy brand from Michael’s or Ghirardelli)
  • Cocoa powder, crushed cookies, or sprinkles for coating (Optional)

Instructions:

1. Prepare the filling: First, beat the cookie butter and softened cream cheese together until smooth. Then, add in powdered sugar and beat for 2-3 minutes. These should remind you of peanut butter balls, truly. If they resemble peanut butter balls, you’re on the right track!

2. Shape and Chill: Shape your cookie butter mixture into balls (You can choose how big. I went for about 1 inch in diameter). Place them on a plate or a lined baking sheet and let chill in the fridge for 30 minutes or the freezer for 15 minutes.

3. Coat in Melted Chocolate: First, melt your candy melts according to the package directions. While those are melting, prepare a cookie sheet or plate and line with parchment paper. Then, dip your cookie butter balls in the melted chocolate and remove with a fork, allowing excess chocolate to drip off. Let rest on the prepared plate or cookie sheet.

4. Decorate: This is where you can be creative! If decorating with something like sprinkles or nuts, make sure to sprinkle those on while your chocolate is still wet! I went with a simple white chocolate drizzle on top of mine.
