Spring Desserts on a Budget

Spread the love

If you’re looking for easy spring desserts that don’t wreck your grocery budget, this list is for you. My “cheap desserts” rule of thumb is about $1 per serving (sometimes a little over). This might mean that some of these desserts cost more total, but they serve 12–16 people, so the per-serving price stays low.

To keep pricing realistic, I estimated costs using Walmart prices and choosing generic/store brands over name brands whenever possible. I’m also assuming you already have basic pantry staples like flour, baking powder, butter, vanilla, and powdered sugar (and powdered sugar is only about $2 at Walmart, so it’s not too bad if you have to buy it). If you’ve got the basics, these fast spring treats are the kind of recipes you can whip up for parties, potlucks, and Easter weekend without feeling like you just bought groceries for a feast.

Easter Bunny Rice Krispie Treats

These are the the most adorable spring desserts. They’re cute, festive, and perfect for Easter tables or bake sales. To keep them budget-friendly, use generic crispy rice cereal store-brand marshmallows and candy melts (My local Food Lion sells a huge portion of generic candy melts for like $4.50).

Springtime Brownies

springtime brownies

These brownies feel extra springy with a simple ganache topping and bright sprinkles, but they’re still super low-effort. For cheap desserts, make them with a boxed brownie mix (or a simple homemade base) and choose store-brand chocolate chips/cocoa, cream and sprinkles when possible.

Strawberry Lasagna

Strawberry lasagna is a total spring crowd-pleaser: creamy layers, bright berry flavor, and it looks impressive in a pan. To stay on budget, buy Walmart brand strawberry pie filling (it was cheaper than the Food Lion brand where I live) and store-brand whipped topping. Name brand is where this one gets pricey fast.

Peeps S’mores Bars

These are fun, colorful fast spring treats that instantly feel like Easter without fancy decorating skills. Save money by using generic graham crackers and whichever chocolate bars are on sale (or even chocolate chips).

Chocolate Lasagna

Chocolate lasagna is one of those cheap desserts that tastes like a party dessert but comes together with simple layers. Keep the cost down with store-brand instant chocolate pudding, generic pretzels, and whipped topping, those swaps add up a lot.

S’mores Tart

smores tart

This one feels special for spring gatherings because it’s a little different than the usual bars, but still totally approachable. To keep it budget-friendly, use store brand graham crackers (usually, buying a box is cheaper than buying pre-made crumbs) and store-brand chocolate chips.

M&M Oreo Brownies

M&M Oreo brownies

These brownies are bright, fun, and perfect when you want spring vibes without leaning fully into fruit or lemon. For a cheaper version, use a boxed brownie mix, generic chocolate sandwich cookies (As much as I love Oreos, and I swear I can taste the difference) and buy your M&M’s in a smaller bag (or use whatever mix-ins you already have).

Lemon Cake Mix Whoopie Pies

lemon cake whoopie pies

Lemon is basically the unofficial flavor of spring, and whoopie pies feel so party-friendly and cute on a platter. For budget savings, use a boxed cake mix (I like the Duncan Hines brand, which is a bit more expensive but worth it for flavor in my opinion) and keep the filling a simple vanilla flavor. For an upgrade, check out my lemon lavender whoopie pies.

Lemon Blueberry Bread

This is one of the best easy spring desserts for brunch tables, gifting, or even a potluck. To stay on budget, use frozen blueberries (often cheaper than fresh) and skip the poppy seeds. This loaf is great even with a simple glaze.

Frosted Lemon Cake Mix Cookies

Soft, frosted lemon cookies are bright and springy, and the cake mix keeps them fast and foolproof. Keep them cheap by making frosting with pantry staples (powdered sugar + butter + vanilla) instead of buying tubs of pre-made frosting. If you want an upgrade, I have lemon strawberry cake mix cookies too!

Cadbury Egg Cookie Bars

These chewy cookie bars are loaded with pastel candy and scream Easter weekend. To keep costs down, buy one bag of candy and use it for multiple recipes or mix in half Cadbury eggs + half chocolate chips.

Cheesecake Fruit Dip

cheesecake fruit dip

This is one of my favorite fast spring treats because it’s no-bake, great for a crowd, and feels “fresh” with fruit. For budget-friendly dipping, pair it with in-season fruit plus lower-cost options like bananas, apples, and store-brand graham crackers.

Lemon Lavender Cake Mix Cupcakes

These cupcakes feel fancy and springy without needing complicated steps. To stay on budget, use box mix and keep in mind that culinary lavender can be surprisingly affordable. Amazon has packets around $7, and since you only use about 1 teaspoon per recipe, one packet lasts through multiple desserts.

Lemon Lavender Shortbread Cookies

Shortbread is simple, pretty, and perfect for spring brunches or baby/bridal showers. You really just need pantry staples, lemon and lavender, which can be a cost-effective “fancy” ingredient when you buy a small packet and use it across several recipes.

Pecan Monkey Bread

pecan monkey bread

Monkey bread is warm, buttery, and such a fun pull-apart dessert for spring weekends or brunch spreads. To keep it in the cheap, aim for store-brand biscuit dough and use a lighter hand with nuts (or skip pecans entirely if they’re expensive that week).

Easy Nest Cupcakes

box mix nest cupcakes

Nest cupcakes are adorable for Easter and spring parties, and they look like you spent way more time than you did. For a budget win, use a yellow cake mix and buy just a smaller bag of Cadbury mini eggs.

If you’re looking for easy spring desserts that look festive without costing a fortune, this list has you covered. These fast spring treats are all about smart shortcuts with store-brand swaps, big-batch pans that serve a crowd, and just a few fun seasonal touches, so you can make cheap desserts that still feel party-worthy.
